Then try this get artichoke and bean dip that is sure to please all and keep them coming back for more.
Gluten-Free & Sucrose-Free Artichoke & Bean Dip
Ingredients:
• 1 jar artichoke hearts, chopped
• 1 16 ounce can pinto beans
• 1 tsp garlic, minced
• 1/4 cup water
• 2 tbsp extra virgin olive oil
• kosher salt, to taste
• fresh ground black pepper, to taste
• 1/2 cup large pitted black olives, chopped
• 2 tbsp fresh basil, coarsely chopped
• 1 tbsp fresh parsley, coarsely chopped
Preparation:
In 3-quart saucepan combine artichokes, pinto beans, garlic, water, olive oil, salt and pepper. Bring to a boil and then lower flame and simmer covered, for 10 minutes. Remove saucepan from oven and spoon the mixture into a food processor or blender. Blend on high until ingredients have a creamy consistency and pieces of olives are still seen in dip.
Pour creamy mixture back into saucepan and add remaining ingredients and continue simmering, uncovered, an additional 5 minutes to concentrate the liquid.
Serve immediately or at room temperature with slices of gluten free bread, gluten free tortilla chips or celery.
Alternative Uses: Can be used as a spread for parties or in sandwiches to replace mustard, mayo, ketchup or other condiments that may contain gluten, fructose or sucrose.
