So when I make an effort and get to the local farmers market I make sure to pick up 4-5 avocados to use sparingly throughout the week. Shockinlgly avocados don’t give me an issue like some of the higher sugar veggies. Perhaps it does and I block it out because its so delicious, but let’s not dwell on the delicious past.

Anyway, this is my favorite breakfast combo. 4 Grade A jumbo eggs on top of whole grain brown rice, my favorite GF english muffin, and then make what I call basic avocado which is just avocado, a little olive oil and kosher salt. I use it as a spread on the english muffins or as the toppings in sandwiches.

I usually only need half to have enough for each side of the English muffin but sometimes I use the other half and mix it with the brown rice as a delicious side dish.
