Last Minute Surprise

Was as the supermarket and couldn’t decide what I wanted for dinner. Decided to mix it up so I got some shitake mushrooms, Nature’s Promise organic turkey chopped meat, fresh arugula and my brown-rice Gluten Free pasta (by Tinkyada).

Since the chopped meat cooks the fastest I left that for last. Made the pasta first since this pasta is amazing where all you have to do is get the water to a boil, throw in the pasta, stir a bit to make sure the pasta doesn’t clump, cover it and turn off the oven letting it sit in the hot water for 12-13 mins, drain and its good to go.

Sauteed the mushrooms in olive oil, kosher salt and fresh parsley (which makes all the difference). Put that side, cooked the chopped meat in the left over juices from the mushrooms and topped with fresh arugula and a drizzle of extra virgin olive oil.

Dish came out amazing and even made enough for work the next day to enjoy it all over again.
