Edamame & Mung Bean Pasta? Sounds…..interesting.

Maybe we should just leave the name off the menu until you try this out.

My roommate ran into this pasta alternative when looking into the gluten-free section at Shoprite. Having already cooked pasta made out of almost everything besides wheat/flour I had high hopes going into preparing this dish.The pasta is made by a brand called Explore Asian and they make a black bean version as well (which I haven’t tried yet)

Luckily, my premonition was correct. This pasta proved to be a triple threat:

  • easy too cook – cooks in 5 minutes or less
  • healthy for you- which often times is not associated with pasta
  • very tasty/light – the taste of the pasta is a light bean taste but meshed well with what I prepared it with.

Once cooked, drained and rinsed with cold water, I threw the noodles into a waiting pan of sauteed shitake mushrooms (which are my favorite mushrooms for their meaty taste and delicious absorption of the oil), fresh ground turkey, sauteed spinach and then garnished with fresh arugula. I finished the dish feeling light, full and truly satisfied. I highly recommend this pasta to anyone that wants to mix it up from the conventional pasta options. Enjoy!
