All choked up

Decided to start food shopping back at Shoprite. Was getting kind of tired of buying 12 things but somehow racking up at least $150 dollar bill at King’s. Got the usual staples but am always looking for new veggies to bring into my diet and test them against my issues with sucrose in vegetables. Most of the tasty ones are out like tomatoes, carrots, corn, squash, zucchini, eggplant and the list goes on. Well I came across sunchokes which I think I had heard of before and may have had it in Asian food but probably am mixing it up with water chestnuts. Anywhoo, decided to mandolin a few of sunchokes so that they were nice and thin and pan roasted them with just a little olive oil spray, sea salt and dried parsley flakes. Took them off once they were golden brown and good god was it delicious. Had them alongside two organic chicken breasts (just seasoned with sea salt, pepper, dried cilantro and kept tender with olive oil spray) and Tinkyada gluten-free elbow pasta with my main girl, arugula on top. Great meal. No reactions to sunchokes. Will make again and see if I can officially add to the short list of veggies that are below the Mason-Sucrose line.
