Roasted Chicken + Cauliflower Power

Roasted Chicken, brown rice pasta, and roasted cauliflower

I’ve recently found a grilled and roasted chicken breast recipe that has truly revitalized my love for chicken. I was getting tired of the same old grilled, dried taste and decided to do something different. The recipe below incorporates that recipe along with my recipe for delicious and slightly spicy cauliflower as the perfect side dish.

Organic chicken breasts, #glutenfree brown rice pasta and cauliflower were all purchased from Trader Joe’s in Hoboken.

RECIPE BELOW:

Grilled & Roasted Chicken:

  • Trader Joe’s Organic Chicken Breasts
  • Salt
  • Pepper
  • Fresh basil
  • Dried parsley
  • Dried cilantro
  • Dried tarragon
  • Olive oil

Preheat oven @ 365 degrees

Season one side of the chicken 

Preheat cast iron skillet or grill pan on stove-top to HIGH

  • Place seasoned side down in hot skillet
    • Season other side once in skillet
  • Grill chicken breasts (4-5 minutes each side)
    • Turn over when white outline is seen around rim of chicken breast
    • Drizzle with olive oil as needed or spray cooked side with olive oil spray after initial turn-over
  • Press chicken against sides of the skillet to sear on all sides

Once grill marks are dark, throw in oven for 13-15 minutes with chicken still in skillet

Remove from oven and let rest on stove-top to allow chicken to soak in juices

Once semi-cool, thinly slice on cutting board

Brown Rice Pasta:

  • Trader Joe’s Brown Rice fusilli
  • Boil water with sea salt or pink salt
  • Bring to boil
  • Cook for 8-9 minutes, do not over cook
  • Drain, rinse in cold to luke-warm temperature water to delay further cooking

Season with:

  • Salt, pepper, dried parsley, dried cilantro, red pepper flakes, touch of cayenne, olive oil
  • Mix together and cover to let cool

Roasted Cauliflower

  • Place raw cauliflower in brownie or 2-3 inch deep baking pan, line with aluminum foil
  • Spray pan with olive oil spray
  • Place cauliflower in pan with raw pine nuts
  • Drizzle with olive oil, season with salt, pepper, dried parsley, cayenne, coriander, red pepper flakes

Roast in oven for 15-18 minutes @ 375 degrees

Occasionally toss cauliflower to ensure even roasting and browning

Remove from oven and let cool

Sautéed Pasta Dish:

  • Preheat sauce pan on low-medium heat
  • Drizzle with olive oil or olive oil spray
  • Throw sliced roasted chicken into pan, slightly browning outside
  • Throw in cooked pasta (no longer than 2 minutes)

Serve and enjoy!!
