Better stale?

I oddly enough stumbled across these Enjoy Life Vanilla Honey Graham sugar cookies when I moved to Caldwell, NJ and was shocked to see that the local Stop and Shop had a pretty decent Gluten-Free section. Obviously with the diet blowing up globally it makes sense for them to sell overpriced GF foods, but I digress.

Even though I don’t have much of a sweet tooth I could always go for a tasty sugar cookie. Problem is they usually have ingredients that ring the siren in my gluten, lactose, sucrose and fructose free life….until these bad boys. With the exception of the honey and the slight reaction the evaporated cane juice crystals, these guys are Gino-friendly. I’ve gotten a few of my friends hooked on these cookies. Initially, you may think they are way too sweet, but then you realize you just ate 6 of them before you even blinked. Not the biggest size, and sadly have shrunk over the time I’ve continued to buy them, they are the perfect quick late night snack. Dipped in milk (even the gross Quinoa milk I drink).

In a truly by accident moment, I had a box in one of my pantry drawers that I all but forgot about until I was cleaning the kitchen. Curious to see what a stale version of this cookie tasted like I was shocked to find the consistency a bit better than the fresh version. The fresh has a snap, but you can taste the sugar much more. The semi-stale version is a bit more amiable, where you can actually bend the cookie, giving it a somewhat fresh-baked taste and mouth feel.

Who knew?!!
